It’s packed with protein, fiber, and flavor - and it comes together easily with a little batch-prep at the start of the week.

Why You’ll Love It

  • Minimal effort, big flavor

  • Meal-prep friendly for busy weeks

  • Balanced with protein, fiber, and healthy fats

  • Customizable with your favorite toppings

Ingredients (Serves 4)

  • 3-4 sweet potatoes, diced

  • 2 zucchini + 1 yellow squash, diced

  • Paprika (for seasoning)

  • 1 lb 96% lean ground beef

  • Cottage cheese (1 serving per bowl)

  • Avocado mash (optional, for healthy fat + creaminess)

  • Hot honey (for finishing drizzle)

Instructions

  1. Prep the sweet potatoes: Dice into bite-sized cubes, season with paprika, and air fry at 400-415°F for 18–20 minutes.

  2. Cook the squash: Dice zucchini and yellow squash, season with paprika, and air fry at 300°F for 8-9 minutes.

  3. Cook the beef: Brown 96% lean ground beef in a skillet until fully cooked.

  4. Assemble the bowl: Combine sweet potatoes, squash, and ground beef. Top with cottage cheese, avocado mash (optional), and a drizzle of hot honey.

Meal Prep Tips

  • Store the sweet potatoes, squash, and beef in separate containers or portioned together in meal-prep bowls.

  • Pack cottage cheese separately in small containers (or grab single-serve cups for convenience).

  • Add a single-serve avocado mash to round out the meal with healthy fats.

Nutrition Highlights

This bowl is:

  • High in protein: thanks to lean ground beef and cottage cheese

  • Rich in fiber: from sweet potatoes and squash

  • Balanced: carbs, protein, and fats in one meal

  • Customizable: swap beef for ground turkey, chicken, or even lentils
